Anyone have a good recipe for gluten-free meatballs or meatloaf?

I'm switching my son to a gluten-free diet and he's asking for meatballs. The ones I buy have wheat product in them. My daughter wants meatloaf. Anyone have a good gluten free recipe? I'd like to make lots of meatballs ahead of time and freeze them so freezing tips would be handy.

  2. meatball and meatloaf recipes are usually interchangable, so if you find one you like best you can use it for both. Many hard to find baking ingredients can be purchased at The Gluten-Free Mall. Meatballs (Gluten-Free) 1 pound lean ground beef 1 - 1 ¼ cup GF crackers (I used "Amaranth Snackers" French onion flavored crackers available at www.glutenfreemall.com) 2 eggs 1 teaspoon oregano ½ teaspoon garlic powder ½ teaspoon salt ½ cup GF parmesan cheese Mix ingredients together and form into balls. Place on cookie sheet and bake in 400F oven for 20 - 30 minutes, turning once after 10-15 minutes. Heat your favorite gluten free spaghetti sauce and let meatballs simmer in the sauce for as long as you'd like. Spoon over wheat-free, gluten-free pasta to serve. ******************************************************************* Meat Loaf #4 (Gluten-Free) 1 lb. meatloaf mix (or, 1/3 lb ground pork, 1/3 lb ground veal, 1/3 pound ground beef - you can also use all ground beef) ½ cup prepared horseradish ½ - ¾ cup gluten free fresh breadcrumbs (not dried) 1 egg, beaten 1 medium onion, diced 1/4 cup water 1/3 cup chopped Italian parsley Mix all ingredients; shape into a loaf form, put on cookie sheet with "sides" Top with the following: ½ cup GF chili sauce (Heinz) 3 tablespoons Heinz ketchup 2 tablespoons Worcestershire Sauce 10 drops GF Hot sauce (optional) Bake at 350 for 45 minutes. Serve with twice baked potatoes with cheese and sour cream and baby glazed carrots.

  4. Meatloaf (or meatballs) are gluten free except for the "filler" which is often bread crumbs or oatmeal. Try using Minute Rice in a mixture of ground beef, onion, green pepper, egg, salt & pepper. Simmer them in tomato sauce and they're "porcupine balls" and you can free them in plastic bags in the sauce to reheat later. Or place the raw ones on a cookie sheet in the freezer until hard and then package in plastic bags. For meatloaf, form the loaves in bread pans lined with plastic wrap and freeze. Once frozen, finish wrapping.
  5. Hi. Dont use oatmeal if u are doing gluten free store bought oats are not GF. (GF oats are available online) I just use something called "Cornflake Crumbs" but I think they are a southern brand. Anyway it says GF on it. U can use GF bread crumbs, GF cornflake crumbs or crush up GF crackers. THey should all freeze just fine. Try brands like Bob's Red Mill and Pamela's. GOod luck!!
  6. Yes. For meatballs simply mix ground beef or ground turkey with ground Almonds. Go to the bulk food section and buy the little slivers of almond that are all white (peeled). Run these in your blender or food processor until you have something about the consistency of corn meal (or even finer if you prefer). Add about 1/4 cup to 1lb meat. For meatloaf do the same thing but also add one egg white. For freezing the meatballs you want to do a quick parboil. I use a pasta pot. Bring salted water to a rolling boil, I settle the strainer full of meatballs into the water for 2 minutes....drain, cool...and then spread on cookie sheet to freeze. Once they are frozen I double bag then in ziplocks and toss them back into the freezer.
  7. you can substitute oats and leave the rest of the recipe the same. Use original quaker oats (cook them first) and add them to your recipe. I don't think instant oats works as well but it might.
